Galangal is a type of ginger used in the Thai kitchen as well as other Southeast-Asian cuisines. It has Orange-brown skin with pale yellow or white interior and has pinkish portions too. Galangal tastes more like pepper than ginger and has a sharp, strong a pine like- aroma. Different galangal varieties vary in their hotness and flavor.
