Red Amaranthus has bright fuchsia-red leaves and a flavor that is reminiscent to a beat. The plant has compounds that showed to have many health benefits, which are mostly present in the oil extracted from the seeds. This plants red color is due to anthocyanins, a pigment that is released in the leaves that helps protect the plant from the sun rays and to help pollinators locate the flower.
